Tajin Sfinari bil Zaytun/ Libyan Lamb Casserole with Carrots and Green Olives#EatTheWorld

Traditionally, tajin sfinari bil zaytun is cooked stove top and then baked in an oven, a clay pot is used, which is later transferred to the oven. This colorful, its combination of carrots and green olives has a unusual mix of flavorings, like caraway seeds, lemon juice, cinnamon, harissa paste and parsley.
Tagine in Libya doesn't refer to the distinctive Morrocan cooking vessels, it just means casserole. 

Serves 3 -4
Ingredient
s  
½ Kg Boneless Lamb / Mutton - cut into 2" cubes
500 Ml Lamb Bone Stock / Chicken Stock or Water
500 Grams Carrots - sliced diagonally into thick pieces
1 Medium Onion- chopped
1 Teaspoon Grated Ginger
1 Stick Cinnamon
1 Teaspoons Caraway Seeds / Shahjeera
Salt & Black Pepper powder - to taste
½ Cup Pitted Green Olives
1 Heaped Teaspoon Harissa - I used homemade Harrisa
For Serving
Olive oil
Juice of one lemon
½ Cup Chopped Parsley

Method
Place the onion, cinnamon and caraway seeds in the pot ( I used my mud pot) with olive oil, and stir on medium heat.

Add the diced lamb, stirring occasionally until it is evenly browned. Add the stock. Cover and leave to cook on a medium heat until the meat is just done, at this point the stock should be reduced to about half the amount (concentrated). Remove the meat from the pot with a slotted spoon and strain the liquid through a sieve (fine enough to catch the caraway seeds). 
Add the meat, stock to same mud pot. Add in the carrots, cover the pot tightly with foil, and place in the oven for about 45 minutes at 200°C. When the carrots and lamb are fork tender, add the harissa and mix it in the sauce. Scatter olives on top and place the pot in the oven for about 10 minutes without a cover. 
When some of the sauce has evaporated and the lamb has browned slightly, remove from the oven. Don't let it dry out!
Stir in the fresh lemon juice over it and drizzle generously with olive oil, then garnish with chopped parsley.
Enjoy warm with bread to soak up the sauce.

Bread Pizza Margarita#Foodieextravaganza

Quick and Easy Slice Bread Slice Margherita Pizza is probably one of the easiest recipes you can make for breakfast, a light and quick dinner or as a evening snack. Made these bread pizzas for the physically challenged children who I, spend time with pretty often. They were so thrilled to make these. In batches of 4 each , each batch was given do one task. One batch applies the butter, the other sauce, the next will grate the cheese on it and then last batch of children will garnish arrange the olives.
When these were ready and each one was served in a paper plate along with a glass of juice, they were so thrilled to eat what they had made. Seeing the smiling and joyful faces, taking a second and third helping, gives me immense satisfaction, joy, to be and spend time with them.
Here the recipe is of a small quantity, but for 30 children I, made in large quantity.. used three medium packs of brown bread, 650 grams of pizza sauce and nearly a kg of mozzarella / pizza cheese and pics are of all the remaining that I could take. I am sure these mini bread pizzas, will be loved by you, especially the kids.  
If you are craving for pizza and don't have time to prepare the dough and then this is best solution. Easy, quick and really, really delicious. It takes no more than 15 or 20 minutes, you can also choose your favorite pizza toppings or with, ingredients you have in house. Can make many other variations according to your tastes and it's done, ready to be served.  
The recipe here is one simple option You can add various vegetables like peppers, onion, garlic, olives or meat like ham, prosciutto, tuna, pepperoni even other type of cheese. You can never get bored with this dish.
Give it a try I am sure you and your kids will love these. The 
Ingredients
6 Bread slices
1/3 to 1/2 Cup Pizza Sauce
1/2 Cup Mozzarella Cheese - grated
1 Teaspoon Dried Oregano
5-6 fresh basil leaves, chopped
Sliced Green or Black Olives - as required

Method
Preheat oven to 200°C with both the elements on.
Butter both the sides of the bread lightly. Arrange bread slices on a baking tray lined with parchment paper.
Spread pizza sauce on each slice of bread. Sprinkle dry oregano, and grated cheese. Top it with sliced black or green olives and chopped basil leaves (by the time I could make these for pics all the olives were over).
Bake for 10 minutes or until the cheese melts. Serve immediately.

Breakfast Pizza Omelette For One#Fantastical Food Fight

This makes a wonderful breakfast! It's like having a flavor of pizza for breakfast with eggs which is gluten free and nutritious. 
A great recipe for when you're in a rush or you're too tired to cook dinner. It's filling and perfect!!
Serves One
Ingredients

2 Eggs
2 Tablespoons Finely Chopped Scallions
2 Tablespoons Capsicum - cut tiny cubes
2 Tablespoons Black Olives slices
1 Long Chicken Sausages - finely chopped
2 Tablespoons Tomato - de seeded and cut into cubes
2 Mushrooms - finely chopped
¾ Teaspoon Red Chilly Flakes
1 Teaspoon Oregano
¼ Cup Milk
¼ Teaspoon Salt
1 Tablespoon Oil
2 Tablespoons Parmesan Cheese

Method

Chop all the vegetables and chicken sausages, keep aside. 
In a large bowl add milk  and all the dry spices, give it a good mix then crack in the eggs and whisk till light and fluffy
Heat oil in a pan, put half beaten egg mixture, top evenly with veggies and sausages ,   then pour in the remaining egg mixture add the olives. 
Cover  the pan  for  a minute or two, when half cooked sprinkle Parmesan cheese. 
Cover, cook on low heat for 2 -3  minutes, cook until done. 
 Flip it for a minute only.  
Take it out on to a serving plates.
Serve with herbed butter toast.
Slice it and enjoy with toast.  Sumptuous breakfast!!

Olives & Cheese Crackers#Improve

Crackers with Cheese, is good snack or appetizer which everyone loves. Makes a great party pleaser. They're tempting and totally addicting!
Ingredients
9 Cracker Biscuits - as required
100 Grams Cream Cheese
1 Cube Processed Cheese
For Topping:
Spicy Chicken Salami - as required
Black / Green olives - as required - I used stuffed Green Olives

Pizza Seasonings  - as required

Method

Blend both the cheese in the blender till smooth. Pour this into a piping bag.
Pipe cream cheese spread evenly on top of the crackers. 
Sprinkle a pinch of pizza seasonings. Arrange  a chicken salami and a green olive.    Serve and Enjoy!!
My Notes
Can use any topping of your choice, like, Finely chopped sausage or any fresh or dried fruits. The choice is unlimited.

Savory Breakfast Sausage & Bread Casserole For Two#FantasticalFoodFight

Welcome to Fantastical Food Fight, September is National Breakfast Month. Theme is : Breakfast Casserole.Made this breakfast casserole with sausage, cheese, egg, milk and bread. Combine all the ingredients in the night and in morning just bake it in a preheated oven. By the time you finish your morning regular nitty-gritties / morning routine. 
You will have a delicious hot breakfast casserole ready.
Ingredients 
2 Long Chicken Sausages - chopped
1 Large Egg
3/4 cup milk
3 Big Bread slices - a day old
1 Small Tomato - chopped
1 Small Onion - chopped
¼ Cup Cream Style Corn
1/8 Teaspoon Sea Salt
¼ Cup Shredded Cheese
2 Cubes Cream Cheese
1 Teaspoon Oil
1 Tablespoon Butter
1 Tablespoon Pizza Sauce
6 Olives - sliced  - can use any type of olives 
1/8 Teaspoon Mixed Herbs
For the Seasonings

1 Teaspoon Heaped Pizza Seasonings

Method
Butter a 5-inch baking  dish.

Butter the slices of bread and line the base of the dish with bread slices
Mix the pizza sauce and cream cheese, well. Apply  the cream cheese spread on bread slices.  Spread half of cheddar cheese over the slices. 
Heat butter in a sauce pan. Heat a pan with a teaspoon of oil and fry the onion till it softens only, then add the sausages, tomato, salt and saute for a minute. Keep aside to cool. 
In the meantime , in a bowl beat together egg, milk and seasonings. 
Pour this mix over the cheese layer 
Top with the sausage mixture. 
Sprinkle mixed herbs, olives and then the remaining cheese.
Garnish it with sliced black olives. Cling wrap this and keep it in the refrigerator. First  thing in the morning take this casserole out, let it come to room temperature.
Preheated the oven at 180 degrees for about 10 to 15 minutes.
Place the casserole and bake it for 40 to 45 minutes. 
Take it out from the oven and serve it hot. 
 Enjoy!! This is a real treat, easy and quick!

Salsa Potato Stacks In Muffin Pan#BakingBloggers

Who does not love potatoes? They are most loved and a sure shot winner at any party, use them as in a main course dish or in a casserole, soup or serve them as appetizers/finger food, they are enjoyed by all. These stacks are healthy, incredibly versatile, be imaginative and use any added  ingredients / veggies of your choice.
The potato stacks are thick enough to be eaten as finger food, but are a little messy. Be sure to give napkins to each one as you are serving. I have made these for a crowd. 
 Baked  2 lots of the above.  Use silicone moulds so that you don't have to wash them.  Wipe it with a kitchen towel and reuse them, these are a real blessing to use for a crowd. 

Ingredients
Olive oil for coating the muffin tin
6-8 Large Potatoes - sliced in roundels
2 Cups  Homemade Salsa Sauce
2 Tablespoon Dried Thyme
2 Tablespoon Black Pepper powder
2 Teaspoon Chilly Flakes
Salt to taste
5-6 Tablespoons Olive Oil
Grated Cheeza Cheese as required
Slices Of 
Homemade Pickled Jalapenos 
Sliced Black or Green Olives as required 

Method

Preheat the oven to 180˚C. Lightly Oil a muffin pan / moulds. Keep aside.
Peel and thinly slice the potatoes, I, used my V Slicer.
 Place all the slices in a big bowl, add the thyme, chilly flakes, black pepper powder, salt and olive oil and give it a good mix so that all the spices are coat the potato slices.
Spread a teaspoon salsa on the bottom of each muffin hole.
Take two potato slices and place them in each muffin hole on top of the salsa. Then place some slices of olives and a slice or two of jalapeno. 
Sprinkle a little cheese. 
Stack two more potato slices on top, the same size or a little smaller than the bottom slices and top with one pickled jalapeño slice, sliced olives and then top it with grated cheese.
Top it with little salsa sauce, leave of coriander leaves. Like wise prepare all the muffin pan/ moulds. 
Cover with foil and bake for 15 minutes. Remove the foil, again spread a little cheese on top of the potato stacks, and broil for 2 - 3 minutes. 
The potatoes should be a little crispy around the edges. 
Scoop out the potato stacks from the muffin tin with fork and a spoon onto a serving plate Serve warm with napkins. 
These vanished in a jiffy, just got 3 to take a pic. These are excellent for tailgating parties.
