Walking Tacos/Tacos In A Bag#SundayFunday

Walking Tacos are a no fuss, no mess taco made right in the bag of chips. No plates, no bowls, no dishes to clean up! Just incredible, tacos, perfect party food or great for kid parties, potlucks, football/cricket games or even a quick snack meal which your family will love! 
I, loved making these since they are an easy way to feed the family or party, because you can customize the taco bag, they are so easy and of course everyone loves tacos! You can create a create your own Walking Taco bar for a party (and let your guests do the “work”). I did not get a snack size bag so used half a bag per person.
Ingredients
200 Grams Shredded Cheese
250 Grams Mince - Beef/ Chicken/ Pork
2 Teaspoons Homemade Taco Seasoning
Snack Size Bags Doritos/ Fritos Corn Chips
Suggested Toppings
Black Beans
Shredded Lettuce
Chopped Tomato or Pico de Gallo 
Salsa
Guacamole
Sour Cream
Ranch Dip
Method
Cook ground beef in a skillet over medium heat, breaking it up with a masher or base of a wooden spoon and stir in taco seasoning until just brown.
Fill chip bags for walking tacos with ground beef, shredded cheese, sour cream, pico de gallo or just whatever you wish. 
Serve with a wooden spoon and Enjoy!!

Halloween Chicken Worms Nuggets#SundayFunday

A crisp, crunchy Halloween Chicken Worms Nuggets are kids staple. They will love these and make perfect fun Halloween party snacks.

Ingredients
For The Chicken Marination
250 Grams Chicken - cut into cubes
½ Teaspoon Level Tandoori Masala
½ Teaspoon Level Red chilly powder
½ Tablespoon Lemon Juice
½ Teaspoon Level Salt or to taste
1 Egg 
2 Tablespoons Heaped Corn Flour
For The Coating
2 Packets Instant Noodles Oil for frying

Method
Boil the noodles along with masala packet that's inside and cook them just 50% or take just one boil. Immediately drain the noodles. Keep aside to cool.

Add the corn flour and mix well so that the noodles are coated.
Cut chicken into cubes. Add all ingredients in a bowl. Marinate this for 30 minutes.
Take a piece of chicken and roll in noodles. Then press nicely with hands. Refrigerate them till ready to fry. Heat oil in deep frying pan. Fry them in hot oil till golden.
Halloween Chicken Worm Nuggets a are ready.

Cheesy Chicken Nachos With Doritos#SundayFunday

These Doritos are with melted gouda cheese, homemade refried beans, spicy  chicken mince  in taco seasoning and a sprinkling of coriander, they are fantastic.  Whatever you would normally use on your nachos just use on the Doritos. Pop the tray into the oven at 180°C for 5-7 minutes or until the cheese has  just melted. That’s it, easy, peasy and delicious snack or appetizer to serve for a party.

Ingredients
Doritos
Chicken Mince
Homemade Taco Seasoning
Shredded Cheddar Cheese or Gouda
Homemade Refried Beans
Sliced Onion
Chopped Scallions Greens

For The Chicken Mince With Taco Seasonings
½ Kg Chicken Mince
2 Tablespoons Chopped Onions
1 Tablespoon Taco Seasoning

Method
For The Chicken Mince With Taco Seasonings
In a large sauté pan, cook the chicken mince, breaking it up, for about 4 -5 minutes. Add onions, homemade taco seasoning sauté until the onion is translucent. Set aside.
Place a layer of Doritos on the serving dish. Top with homemade refried beans. Then the shredded cheese (I used Gouda cheese).

Bake at 180°C for 5-7 minutes or until cheese is melted
Don’t bake the Doritos nachos too long or they’ll start to get a little crispy on top. 
Garnish them with sliced onions & chopped scallion greens.
These tasted so very, very good! My friends enjoyed these. You will definitely want to make these nachos with Doritos the next time you have a party or a get together. They make a wonderful snack, party dish, appetizer or even a casual dinner.

Potato Cheese Samosa#SundayFunday

Make the perfect Potato Cheese Samosas for snack time or kid's lunch box. These are crispy, crunchy pockets filled with potatoes and cheese . These samosas are perfection in every bite. Eat them on their own or dunk them in a hot & sweet ketchup or any sweet or spicy chutney of your choice.

Cup Measurement 250ml
Ingredients
For Dough
1 Cup All Purpose Flour
½ Teaspoon Sea Salt
2 Tablespoons Ghee - melted
¼ Cup + 1 Tablespoon Water - I used
For Filling
½ Boiled Potatoes
¾ Boiled Green Peas
8 - 10 Mint Leaves
2 Tablespoons Green coriander Leaves
3 Green chilies or to your spice level
¼ Teaspoon Red Chili Flakes or to your spice level
½ Teaspoon Salt or to taste
100 Grams Grated Mozzarella Cheese
Oil for frying as required

Method
For The Dough 
Mix all the ingredients in a bowl and knead to a stiff dough. Take it out on to a work surface and again knead for 2 minutes till smooth. Cover and let it rest for at least 15 minutes.

In the meantime let's make the filling
In bowl add all the ingredients as mentioned except the cheese. Mix well, taste for salt and spices add according to your taste if required. 
Then add the cheese and again mix well.
Filling is ready.
Look at this post to make the Samosa.
Place the filling and seal the samosa. 
Heat the oil in a kadai, and deep-fry the samosas on a slow flame till they turn golden brown in color. Drain on absorbent paper. Keep aside. 
Serve. Eat them on their own or dunk them in a hot & sweet ketchup or any sweet or spicy chutney of your choice.

Eggless Jam Shortcake Swirls#SundayFunday

These shortcakes are so delicious and buttery. To make these I used aluminum muffin mold, would suggest that you use a silicon muffin/cupcake molds to make these. While un molding these tend to break. Felt sorry for not using my silicon cupcake molds to make these delicious shortcakes, no doubt the broken ones my hubby enjoyed. The good ones I took for our Hi Tea Party with friends.


Makes 13 -14 Shortcake Swirls
Ingredients

200 Grams Butter - I used salted butter
75 Grams Icing Sugar
220 Grams All Purpose Flour
2 Tablespoons Jam or as required
½ Teaspoon Vanilla Essence
Icing sugar as required for dusting - optional

Method

Grease silicon cupcake molds and place them in the muffin tray (do not use liners).  
Beat butter and icing sugar well until creamy, stir in the flour, mix gently. Refrigerate this batter for at least 20 minutes. In the meantime preheat the oven to 180°C.   
Pour the mixture into a large piping bag with a large piping nozzle. Pipe swirls of mixture into the molds. Bake for 18 to 22 minutes ( depending on how many swirls you make into the molds).    
Once the they are golden, take them out of the oven and keep them on a wire rack to cool.
Un mold each shortcake gently, sprinkle with icing sugar, put a small spoon drop of jam into center of each.   
Serve with tea or coffee. These got over in one go for our party.

Paneer Lollipops#SundayFunday

A yummy combination of paneer slices on stick marinated with spices, called paneer lollipop is a perfect snack to prepare over the weekend or a party! These are a realy kid's delight.
Ingredients
250 Grams Paneer
For The Marination
¼ Teaspoon Vegetarian Stock Powder
2 Tablespoons Red Chilly Garlic sauce
¼ Teaspoon Garam Masala Powder
¼ Teaspoon Coriander Powder
¼ Teaspoon Amchur/Mango Powder
2 Tablespoons Corn flour
For The Paste/Slurry
¼ Cup All Purpose Flour
¼ Cup Corn Flour
Salt & Black Pepper Powder to taste
Water as required to make a thick paste
Other Ingredients
Toothpicks as required 
¼ Cup White Sesame Seeds
Corn Flour as required for rolling
Oil as required for frying

Method
Wash and cut the paneer into broad/lollipop sticks.
In a large bowl add all the marination ingredients and make thick paste, add paneer sticks and toss it so that the spices stick to paneer sticks and leave aside for about 20 minutes,
Now take another bowl and add the slurry ingredients to this and add salt n pepper and dissolve with water to make a thick coating paste. 
Pierce each paneer lollipop to a stick one by one and roll each in dry corn flour and then roll in slurry, shake this lightly to make a even coating. Then roll in  sesame seeds. 
Heat oil in broad frying pan, shallow fry each paneer lollipop on medium high flame till one side is golden brown then flip and fry till all sides and golden. Serve hot with ketchup or any chutney or your choice.  
Very yummy and delicious .......crispy from outside and soft from inside with a rich garlic flavor.

My Notes 
I haven't used any salt in this recipe as chilly garlic sauce and stock has already lot of salt content in it ..you could check the marinade and use according to your taste.

Pulled Chicken & Celery Sandwiches#SundayFunday

Pulled Chicken & Celery Sandwiches are delicious and filling. A perfect meal to carry for your office lunch or kids school lunch box, serve these as party pleasers. What I love about sandwiches that they are shelf stable for at least 4 -5 day's in the refrigerator. Prepare them in advance and enjoy whenever you are hungry. For this you can use any leftover chicken.
Ingredients
4 - 6 Big Slices White Sandwich Bread
1 Cup Pulled Leftover Chicken
½ Cup Grated Cabbage
1 Carrot- grated
2 Tablespoons Finely Chopped Celery With Leaves
2 Tablespoons Finely Chopped Salad Leaves
1 Tablespoon Chopped Pickled Jalapenos
1 Tablespoon Chopped Pickled Gherkins
1 Tablespoon Sriracha Sauce
½ Cup Mayonnaise
3 Tablespoons Grated Cheese
Butter as required

Method
In a bowl add mayonnaise, cheese, Sriracha sauce mix well to combine, then add in the chopped cabbage, carrot, jalapenos, gherkins , finely chopped celery with leaves, salad leaves , and pulled chicken mix well, Sandwich filling is ready .

Butter both the sides of the bread.
In one slice of bread , place 2 -3 tablespoons of the prepared filling and press to level it well.
Cover it with a another slice of bread. Like wise prepare the rest of the sandwiches and cling wrap them well. Refrigerate it for at least 3 -4 hours.
then trim the sides and cut into small triangles. 
Serve, Enjoy!!

Bread Pizza Margarita#Foodieextravaganza

Quick and Easy Slice Bread Slice Margherita Pizza is probably one of the easiest recipes you can make for breakfast, a light and quick dinner or as a evening snack. Made these bread pizzas for the physically challenged children who I, spend time with pretty often. They were so thrilled to make these. In batches of 4 each , each batch was given do one task. One batch applies the butter, the other sauce, the next will grate the cheese on it and then last batch of children will garnish arrange the olives.
When these were ready and each one was served in a paper plate along with a glass of juice, they were so thrilled to eat what they had made. Seeing the smiling and joyful faces, taking a second and third helping, gives me immense satisfaction, joy, to be and spend time with them.
Here the recipe is of a small quantity, but for 30 children I, made in large quantity.. used three medium packs of brown bread, 650 grams of pizza sauce and nearly a kg of mozzarella / pizza cheese and pics are of all the remaining that I could take. I am sure these mini bread pizzas, will be loved by you, especially the kids.  
If you are craving for pizza and don't have time to prepare the dough and then this is best solution. Easy, quick and really, really delicious. It takes no more than 15 or 20 minutes, you can also choose your favorite pizza toppings or with, ingredients you have in house. Can make many other variations according to your tastes and it's done, ready to be served.  
The recipe here is one simple option You can add various vegetables like peppers, onion, garlic, olives or meat like ham, prosciutto, tuna, pepperoni even other type of cheese. You can never get bored with this dish.
Give it a try I am sure you and your kids will love these. The 
Ingredients
6 Bread slices
1/3 to 1/2 Cup Pizza Sauce
1/2 Cup Mozzarella Cheese - grated
1 Teaspoon Dried Oregano
5-6 fresh basil leaves, chopped
Sliced Green or Black Olives - as required

Method
Preheat oven to 200°C with both the elements on.
Butter both the sides of the bread lightly. Arrange bread slices on a baking tray lined with parchment paper.
Spread pizza sauce on each slice of bread. Sprinkle dry oregano, and grated cheese. Top it with sliced black or green olives and chopped basil leaves (by the time I could make these for pics all the olives were over).
Bake for 10 minutes or until the cheese melts. Serve immediately.

Air Fryer Tofu 65- Vegan & Gluten Free#MultiCookerMonday

Tofu, this soya cheese which is a perfect replacement for paneer for vegan's. They are excellent source of protein with many health benefits. Tofu has a neutral taste.
Made this Tofu 65 which is an excellent for a starter or else as a snack food for my vegan guest. Since these are air fried it doesn't take much time in cooking. Once marinated, these tofu slices can be grilled in an air fryer with less effort and short time.

Ingredients
400 Grams Firm Tofu
2 Teaspoons Kashmiri Red chilly powder
1 Teaspoon Black Pepper powder
1 Teaspoon Cumin powder
1 Teaspoons Ginger garlic paste
1 Small Lemon juice
1 Teaspoon Garam masala
1 Teaspoon Pink Himalayan Salt or to taste
1 Teaspoon Oil
A Pinch of Tandoori color - optional
½ Teaspoon Oil for brushing the air fryer basket

Method
Drain the water from the tofu and cut as medium thick slices and keep aside.

Take all the ingredients in bowl except the tofu slices, mix the marinade well and then add the tofu slices. apply the marinade well on each slice. Cover and keep it in the refrigerator for at least an hour.
After an hour take it out of the refrigerator and preheat the air fryer for 4 minutes at 180°C.
Grease the air fryer basket with a pastry brush with oil. Then arrange the slices, do no crowd the basket and set the air fryer timer to 10 or 15 minutes so as to how crispy you want.

It took just 25 minutes to make two batches of these in a preheated air fryer,
The first batch I kept for 10 minutes after 6 minutes changed the sides. The next batch to make a little more crispy kept it for 15 minutes, after 10 minutes changed the sides.
I served it Mayo Chipotle Sauce , you can serve this with any sauce of your choice.
